In 1500, Queen Elizabeth I decreed that lamb or mutton should be eaten with bitter herbs, in an attempt to discourage consumption and support the wool trade. But mint made the meat, especially that of older, richer sheep, much tastier. Colman's prepares its mint sauce with mint grown in Norfolk, once again choosing local foods for its products.
