Clamato’s origins:  The Cesar cocktail

Clamato, a favourite in North America from Canada to Mexico is made with tomato juice concentrate, spices and clam juice broth.  It may be an acquired toast with its subtle seafood flavour, but the clam juice imparts a slight briny taste that pairs gorgeously with the acidity of tomatoes.  The story goes that Clamato was born when a restaurant manager was tasked with creating a cocktail based on the famous NY dish, Manhattan Clam Chowder.  His creation came to be known as the Cesar Cocktail and from there Clamato was born.
