Prawn crackers or shrimp puffs are a common snack food throughout South East Asia, but most closely associated with Indonesia and Malaysia.

To prepare the prawn crackers, carefully add to hot oil. They will immediately puff up to twice their size and can be removed from oil and placed on absorbent paper towel for a moment. Serve with sweet chilli sauce or sambal oelek.
